Our Process

NOM 1414
Since 1929, the Vivanco family has crafted exceptional tequila from NOM 1414. This revered highlands distiller also maintains one of the largest agave ranches in Los Altos, Jalisco, where all agave is source at elevations exceeding 6,800 feet. Iron-rich mineral water completes our tequila which comes from a well on the 5th generation estate that is approximately 800 feet deep.

Traditional Brick Oven Cooking
Our agave piñas undergo a 54-hour slow-cooking process in traditional brick ovens, a time-honored method that benefits from patience. Extended cooking creates depth and complexity that is impossible to achieve with modern shortcuts, imparting subtle notes of honey, caramel, and roasted fruit.

Roller Mill Extraction
After cooking, our agave piñas move through our roller mill. This modern extraction method efficiently separates the sweet nectar from the fiber resulting in pure juice that retains the plant's essential characteristics—bright citrus notes, subtle minerality, and natural sweetness.

Natural Fermentation
In open-air vats, wild yeast slowly transforms sugars into alcohol while in another vessel we simultaneously ferment sugars using champaign yeast. The Vivancos play classical music to the fermentation tanks to encourage the yeast to "dance." Sergio Vivanco describes this as his "Mozart" method.

Double Copper Pot Distillation
After fermentation, both tequilas are double distilled in small copper pot stills originating from the town of Santa Clara del Cobre near Pátzcuaro in Michoacán, the source of some of the world's most extraordinary copper. Our master distiller using two precise distillations, preserves essential flavors while delivering character and complexity.

Unique Cooperage
We rest our aged tequilas in a combination of American and French Oak barrels, developing rich vanilla, caramel and spice notes while maintaining the essence of blue agave. Our limited release products take advantage of other extraordinary barrels from all over the world.

Handcrafted Bottling
Alma del Jaguar tequila is bottled unfiltered by hand. Our sustainable packaging materials are sourced from suppliers within an 85-mile radius of the distillery, including 100% recycled Mexican glass bottles, agave fiber labels, repurposed cork closures, and recycled cardboard cartons.
